Mexican Rice with Heirloom Tomatoes

I canned my heirloom tomatoes I grew last summer and have been using them in various dishes.  Actually, any recipe that calls for tomatoes.  Everything, including rice, tastes SO MUCH better.  This batch included Green Sausage, German Orange Strawberry and Pink Berkeley Tie Dye heirloom tomatoes,
